- Filling (inside the fish)
- 1 diced tomato
- 1 sliced onion (rings)
- 1 diced green bell pepper
- 1 grated carrot
- ¼ cup chopped dill
- ¼ cup chopped parsley
- ⅓ cup fresh lemon juice
- 2 cloves minced garlic
- 1 tsp dried coriander
- 1 tsp salt
- 1 Tbsp vegetable oil
- Glaze (to brush during grill)
- 1 cup water
- 1 Tbsp minced garlic
- 1 tsp finely chopped green pepper
- 1 tsp finely chopped hot red pepper
- 4 Tbsp fresh lemon juice
- 4 Tbsp white vinegar
- pinch salt
- pinch dried coriander
- pinch cumin
- 4 fresh tilapia fillets, cleaned (about 6‑8 oz each)
Instructions
- Combine the garlic, green pepper, hot red pepper, lemon juice, salt, coriander, and cumin in a small bowl to create the marinade.
- Insert the mixture into each fillet, patting to coat thoroughly, and let it rest covered for 15 minutes.
- Mix the tomato, onion, green bell pepper, carrot, dill, parsley, lemon juice, garlic, coriander, salt, and oil in a large bowl to produce the filling.
- Stuff each marinated fillet with the stuffing, wrap tightly in parchment or foil, and place in a baking dish.
- Whisk together the water, garlic, green pepper, hot red pepper, lemon juice, vinegar, salt, coriander, and cumin to form the glaze.
- Preheat the oven to 400 °F (200 °C). Transfer the wrapped fillets to a baking sheet and roast for 12‑15 minutes.
