Ingredients
- 14 oz rice noodles
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 10 oz peeled and deveined shrimp
- 2 teaspoons curry powder
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 small red chili pepper, minced (optional)
- 1 small piece grated ginger
- 1 medium onion, finely chopped
Instructions
- Boil the rice noodles until tender, then drain and set aside.
- Whisk soy sauce and oyster sauce together in a small bowl.
- Sauté half a tablespoon of sesame oil in a large skillet over medium heat; cook garlic, onion, chili, and ginger until golden, about 2 minutes.
- Stir‑fry remaining sesame oil, shrimp, and curry powder until shrimp turns pink, about 6 minutes.
- Combine the cooked noodles with the shrimp mixture and mix well.
- Pour the soy‑oyster sauce over the noodles, stir again for a few minutes, then remove from heat.
