Ingredients

  • 4–6 chicken thighs, bone-in, skin-on
  • 1 cup fresh orange juice
  • 1 large orange, peeled and sliced
  • 2 bell peppers (mixed colors), cut into strips
  • 2 tomatoes, cut into wedges
  • 1 tablespoon tomato paste
  • 1 red chili pepper, finely chopped
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a large baking tray with olive oil.
  2. Pat the chicken thighs dry with a paper towel. Rub the tomato paste evenly over the chicken, then season generously with salt and black pepper.
