Ingredients
- 4–6 chicken thighs, bone-in, skin-on
- 1 cup fresh orange juice
- 1 large orange, peeled and sliced
- 2 bell peppers (mixed colors), cut into strips
- 2 tomatoes, cut into wedges
- 1 tablespoon tomato paste
- 1 red chili pepper, finely chopped
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Grease a large baking tray with olive oil.
- Pat the chicken thighs dry with a paper towel. Rub the tomato paste evenly over the chicken, then season generously with salt and black pepper.
- Arrange the seasoned chicken thighs on the prepared tray. Scatter the bell peppers, tomatoes, and chopped chili around the chicken, and sprinkle the vegetables lightly with salt.
- Layer the sliced oranges on top of the chicken thighs. Pour the fresh orange juice over all the ingredients in the tray.
- Bake in the preheated oven for about 60 minutes, or until the chicken is fully cooked through and the skin is golden and slightly caramelized. Garnish with fresh parsley before serving.
