- 3 cups all‑purpose flour
- ½ tsp salt
- 1 large egg
- ¾ cup warm water
- 1 lb ground beef (or lamb)
- 1 small onion, grated
- ½ tsp salt (filling)
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- 2 cups plain Greek yogurt
- 2 garlic cloves, minced
- 2 tbsp butter
- 1 tsp red pepper flakes (sauce)
- 1 tsp tomato paste (optional)
- ½ tsp dried mint, for garnish
Instructions
- Combine flour and salt in a large bowl. Create a well in the center.
- Pour the egg into the well, then gradually add water while mixing. Knead until a firm dough forms.
- Knead the dough for about 10 minutes to develop gluten, then cover and let rest for 30 minutes.
- Mix ground beef, grated onion, salt, black pepper, and red pepper flakes in a separate bowl.
- Roll out the dough thinly and cut it into 2 cm squares.
- Scoop a small portion of filling into the center of each square and fold the edges together to seal.
- Boil salted water in a pot until it roars. Drop the dumplings in and cook 8‑10 minutes until they float to the surface.
- Whisk yogurt and minced garlic in a bowl. Heat butter in a skillet, then sauté red pepper flakes and optional tomato paste until fragrant.
- Pour the yogurt mixture over the cooked dumplings, then top with the butter‑flavor sauce.
- Sprinkle dried mint over the dish and serve immediately.
