Ingredients
- ½ teaspoon salt
- 1 cup boiling water
- 500 g carrots, sliced (≈4 cups)
- 2 cups sugar
- 1 cup shredded coconut
- 1 cup chopped walnuts
- 1 tablespoon plant‑based ghee
- ½ cup crushed biscuits
- 1 cup chopped dates
- 1 cup rolled oats
- 1 teaspoon ground nutmeg
Instructions
- Boil the carrots in salted water until tender, about 10 minutes.
- Mash the cooked carrots and stir in sugar until smooth.
- Shape the mixture into bite‑size balls.
- Roll each ball in shredded coconut and place on a tray.
- Refrigerate for 30 minutes before serving.
