Ingredients
- 4.4 lbs cow feet, cut into pieces
- Water, as needed for rinsing and boiling
- 5 whole cloves
- 4 bay leaves
- 1 tablespoon cardamom
- 3 cloves
- 1 teaspoon mace
- 1 teaspoon whole black pepper
- 1 tablespoon sugar
- ½ teaspoon ground black pepper
- 2 carrots, chopped
- 1 tomato, chopped
- 3 garlic cloves
- 1 onion, chopped
- ½ piece fresh ginger, grated
- 1 tablespoon salt
Instructions
- Clean the cow feet, removing any hair with a sharp knife and rinsing them thoroughly under running water.
- Rinse the feet again, then place them in a large pot with a splash of water and 5 cloves. Bring to a boil, skimming off the scum that surfaces.
- Drain the cleaning water, rinse the feet once more, set aside for a few minutes.
- Simmer the feet in a second pot with water, bay leaves, cardamom, cloves, mace, whole pepper, sugar, and ground pepper until the broth boils.
- Add carrots, tomato, garlic, onion, ginger, and salt. When the mixture boils, add the cleaned feet, cover, and let the soup simmer until the feet are tender (about 90 min).
- Season with additional salt, simmer for another 15 min, then turn off the heat and serve hot.
