Ingredients
- 3 cups of water
- 1 cup of rice
- 1 cup of yellow lentils
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt, to taste
- 1 teaspoon of cumin seeds
- 2 eggs
Instructions
- Heat olive oil in a pot over medium heat, then sauté the chopped onion until golden brown.
- Add the cumin seeds and salt, stirring until fragrant.
- Add the minced garlic, rinsed rice, and lentils. Stir well to combine.
- Pour in the water, bring to a boil, then reduce heat to low, cover, and simmer until rice and lentils are tender.
- Make small wells in the rice and crack the eggs into them. Cover the pot again and allow the eggs to cook until set.
- Serve warm, optionally topped with fresh herbs or salad on the side.
