Ingredients

  • 14 oz spaghetti (about 400 g)
  • 1 Tbsp olive oil
  • 4 cloves garlic, minced
  • ¼ tsp dried red pepper flakes
  • 2 lb shrimp, peeled and deveined (≈ 650 g, about 20 medium‑sized)
  • 6 medium tomatoes, finely diced (≈ 650 g)
  • 2 Tbsp fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Boil the spaghetti in a large pot of salted water until al dente. Reserve ½ cup of pasta cooking water and drain the pasta.
  2. Heat the olive oil in a large skillet over medium‑high heat. Add the minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
  3. Cook the shrimp in the skillet, tossing frequently, until pink and opaque—about 3–5 minutes.
  4. Stir in the diced tomatoes, reserved pasta water, and season with salt and pepper. Simmer for 2 minutes until the tomatoes warm through.
  5. Combine the cooked spaghetti with the shrimp‑tomato mixture, tossing to coat. Adjust seasoning as needed.
