Ingredients
- 14 oz spaghetti (about 400 g)
- 1 Tbsp olive oil
- 4 cloves garlic, minced
- ¼ tsp dried red pepper flakes
- 2 lb shrimp, peeled and deveined (≈ 650 g, about 20 medium‑sized)
- 6 medium tomatoes, finely diced (≈ 650 g)
- 2 Tbsp fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Boil the spaghetti in a large pot of salted water until al dente. Reserve ½ cup of pasta cooking water and drain the pasta.
- Heat the olive oil in a large skillet over medium‑high heat. Add the minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
- Cook the shrimp in the skillet, tossing frequently, until pink and opaque—about 3–5 minutes.
- Stir in the diced tomatoes, reserved pasta water, and season with salt and pepper. Simmer for 2 minutes until the tomatoes warm through.
- Combine the cooked spaghetti with the shrimp‑tomato mixture, tossing to coat. Adjust seasoning as needed.
