Ingredients
- 14 oz spaghetti
- 1 lb lean ground beef
- 1 Tbsp olive oil
- 2 medium onions, finely chopped
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 2 cloves garlic, minced
- 2–3 sprigs fresh rosemary, minced
- 14 oz crushed tomatoes
- ½ cup fresh basil, chopped
- 1 tsp dried thyme
- 2 bay leaves
- 2 Tbsp tomato purée
- ½ cup grated Parmesan cheese
- 1 beef stock cube, crushed
- ½ cup red wine vinegar
- Salt and freshly ground black pepper, to taste
- Extra grated Parmesan for serving
Instructions
- Heat the olive oil in a large pot over medium‑low heat.
- Add onions, carrots, celery, garlic, and rosemary; sauté for 10 minutes until vegetables soften.
- Brown the ground beef, stirring constantly, until fully cooked and browned (3–4 minutes).
- Stir in tomatoes, basil, thyme, bay leaves, tomato purée, stock cube, and vinegar; bring to a gentle boil.
- Simmer the sauce on low heat, covering the pot, for 1 hour 15 minutes, stirring occasionally, until thickened.
- Season with salt, pepper, and Parmesan, stirring until well blended.
- Cook spaghetti in a separate pot of salted boiling water until al dente; drain.
- Combine the pasta with the Bolognese sauce, tossing to coat.
- Serve hot, topped with extra Parmesan and a sprinkle of fresh basil.
