Ingredients

  • 14 oz spaghetti
  • 1 lb lean ground beef
  • 1 Tbsp olive oil
  • 2 medium onions, finely chopped
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 2–3 sprigs fresh rosemary, minced
  • 14 oz crushed tomatoes
  • ½ cup fresh basil, chopped
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 Tbsp tomato purée
  • ½ cup grated Parmesan cheese
  • 1 beef stock cube, crushed
  • ½ cup red wine vinegar
  • Salt and freshly ground black pepper, to taste
  • Extra grated Parmesan for serving

Instructions

  1. Heat the olive oil in a large pot over medium‑low heat.
  2. Add onions, carrots, celery, garlic, and rosemary; sauté for 10 minutes until vegetables soften.
  3. Brown the ground beef, stirring constantly, until fully cooked and browned (3–4 minutes).
  4. Stir in tomatoes, basil, thyme, bay leaves, tomato purée, stock cube, and vinegar; bring to a gentle boil.
  5. Simmer the sauce on low heat, covering the pot, for 1 hour 15 minutes, stirring occasionally, until thickened.
  6. Season with salt, pepper, and Parmesan, stirring until well blended.
  7. Cook spaghetti in a separate pot of salted boiling water until al dente; drain.
  8. Combine the pasta with the Bolognese sauce, tossing to coat.
  9. Serve hot, topped with extra Parmesan and a sprinkle of fresh basil.
