Ingredients
- 2.2 lb beef strips
- 3 Tbsp garlic powder
- 3 Tbsp onion powder
- 3 Tbsp paprika
- 3 Tbsp beef spice blend
- 1 tsp salt & black pepper
- 4 cups thinly sliced onions (from 1 kg)
- 3 bell‑pepper sticks, julienned
- 2 thin tomato slices
- 1 Tbsp sumac
- 1 bunch parsley, chopped
- ½ cup white vinegar
- 1 tsp baking soda
- ½ cup tahini
- ¼ cup fresh lemon juice, 1 tsp cumin, pinch of salt, hot water (to taste)
- 1 bunch fresh chives (leafy part only)
- 4 pickled cucumbers
- 1 cup mayonnaise
- 1 lemon, sliced
- Bag of pita or flatbread (for serving)
Instructions
- Combine garlic, onion, paprika, beef spice, salt, and pepper in a large bowl.
- Add vinegar and baking soda, mix until well blended.
- Marinate beef and onions in the mixture; cover and refrigerate for 2 h.
- Heat 5 Tbsp oil in a large skillet over medium heat.
- Add beef and onions; stir until onions caramelize.
- Sauté until meat is cooked through and juices have reduced.
- In a separate pan, warm a splash of oil.
- Cook bell peppers, tomatoes, and parsley until just tender.
- Whisk pickled cucumber, mayonnaise, chives, and lemon in a bowl until creamy.
- Optionally, sprinkle sumac over the shawarma for extra flavor.
- Assemble each pita with meat, veggies, and Hooriya sauce.
- Serve immediately with lemon wedges.
