- 1 medium onion, chopped
- 3 cloves garlic, minced
- ½ tsp dried oregano (or thyme)
- ¼ tsp red pepper flakes
- 2 Tbsp tomato paste
- 1 (28 oz) can whole peeled tomatoes
- 1 cup sliced mushrooms
- Salt
- Black pepper
- Grated Parmesan cheese, for garnish
- Chopped parsley or basil, for garnish
Directions
- Boil: Cook the spaghetti in salted water until al dente, about 10‑12 minutes. Drain and set aside.
- Heat: Warm the olive oil in a large skillet over medium heat.
- Sauté: Add the onion and cook 3‑5 minutes until golden.
- Cook: Toss in garlic, mushrooms, oregano, red pepper flakes, salt, and black pepper; stir for 5‑8 minutes.
