Ingredients
- 2 Tbsp vegetable oil
- 2 medium onions, finely chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 lb sausage (thinly sliced)
- 3 medium tomatoes, diced
- ¼ tsp ground black pepper
- 3 green bell peppers, diced
- 1 small green chili (or pepper), sliced
- Salt to taste
Instructions
- Heat the oil in a large skillet over medium heat. Sauté the onions with a pinch of salt until they just start to soften, about 2–3 minutes.
- Stir in the minced garlic and cook until fragrant, 30 seconds. Add the sliced sausage and continue tossing until the meat is lightly browned.
- Fold in the diced tomatoes and black pepper. Keep cooking on medium heat until the tomatoes break down and a thick sauce forms, roughly 5 minutes. Then add the green bell pepper and hot chili, cooking for another 2–3 minutes.
- Season with salt to taste. Stir carefully until the sausage is fully cooked and the flavors meld together. Turn off the heat and serve hot.
