Instructions

  1. Heat oil in a pan and sauté the sliced onion until translucent.
  2. Add chicken pieces and stir for about ten minutes until they start to brown.
  3. Stir in the sliced potatoes, zucchini, green pepper, and continue to mix before adding tomatoes and cilantro.
  4. Cook on medium heat, covered, for five minutes.
  5. Add crushed garlic and curry, stirring for two minutes, then pour in two cups of hot water and cover the pot.
  6. Let it simmer until the water reduces, then add the red pepper, cardamom, cinnamon, black pepper, and cumin.
  7. Continuously stir, incorporating another cup of hot water, and cover for another five minutes.
  8. Mix in the tomato paste, adjust seasoning with salt, and let it cook on low heat until the dish thickens.
  9. Check if the chicken is fully cooked; if not, add half a cup of water and simmer until done.
  10. Serve the Chicken Aqda warm with bread or white rice.
